collar bone
the bone at the shoulder of a fish that forms the leading edge of a belly flap, q.v., in preparing fish as food. The collar is discarded when a fish is made into a steak or fillet but left on headless fish for sale because it helps retain the fish\'s shape. Also called lug bone, nape bone and shoulder bone
